Protein Pancake Recipe

Sometimes we need something sweet and satisfying, now imagine creating something which meets both of those needs and isn't unhealthy. These are relatively simple ingredients and easy to get your hands on which won't require you travelling across the globe to gather.

I managed to put together some basic ingredients that help these healthy treats give you the protein you need with an active lifestyle.

Ingredients:

  • 1 cup rolled oats

  • 1 cup non-dairy milk or water, plus more if desired

  • 1 Scoop Raw Sport Toffee Fudge Protein Powder

  • 1/2 cup unsweetened applesauce/mashed bananas

  • 2 teaspoons baking powder

  • 1 tablespoon ground flax

  • 1 teaspoon vanilla extract (optional)

  • 1/4 teaspoon ground cinnamon

  • 1/8 teaspoon salt

  • Maple syrup/peanut butter/Nuts/Seeds - for topping.

Directions:

  • Preheat a medium skillet or griddle over medium heat. Lightly grease with cooking spray.

  • In a blender or food processor, add all ingredients and blend until completely smooth, adding more liquid if desired for thinner pancakes.

  • Let the batter sit for 5 minutes.

  • Use about 2 tablespoons of batter to form each pancake.

  • Cook on one side until bubbles begin to form, about 3-5 minutes.

  • Flip and cook about 3-5 more minutes.

  • Serve with a drizzle of maple syrup and peanut butter, and top with nuts & seeds!

I hope you enjoy the recipe!
